Extended 7th chords are '7th chords' (1 3 5 7) that are extended by one tone, When playing in one key then you only have three tones left over, The remaining tones are the '9' '11' and '13' so those are the tones you can add to the 7th chord...
The main focus here is the 'added' '11' so the chord formula is (1, 3, 5, 7, 11)...
When you apply this formula to the 'three minor tones' of whatever key you are in then you come up with the 'three pentatonic scales' in that key, You can easily say that the three pentatonic scales are each the same chord...
A minor 7th with an added 11th (A C E G . D)...

Aka. A pentatonic scale...
D minor 7th with an added 11th (D F A C . G)...

Aka. D pentatonic scale...
E minor 7th with an added 11th (E G B D . A)...

Aka. E pentatonic scale...
Interestingly enough when you apply this formula to the 'IV' major tone of whatever key you are in then you come up with the 'hirajoshi' scale for that key, Of course there are other formulas with different names so the root could be any of the tones but the 'F' tone has a strong relationship...
IV. Fmaj7 add11 - F A C E B... C Hirajoshi...
Aka. (Iwato - Kumoi - Japanese) scale...
When you use the formula for three tones left over (C G B) then you come up with three pentatonic like scales that are rarely mentioned, At least we haven't found what they are yet, If you like the japanese scale then you can appreciate these...
I. Cmaj7 add11 - C E G B F...
V. Gmaj.7 add11 - G B D F C...
VII. B.dim7 add11 - B D F A E...
I have a huge list of 'exotic scales' that I am going through and alot of them turn out to be known scales, These three new scales could be something else so they are relatively unknown (namewise), These are probably close to the name we have given them which indicate chords...
A minor Add11 (A E C D G)...

D minor Add11 (C F A D G)...

E minor Add11 (A E B D G)...

The 'minor add11' chords are five tone chords that happen to be pentatonic scales, The 'hirajoshi' scale isn't like the pentatonic scale but the 'hirajoshi' chord is no different than the pentatonic chords...
F major Add11 (B F A C E)...

Aka. Hirajoshi Chord...
F major Add11 (C F A B E)...

Aka. Hirajoshi Chord...
To get technical it is probably best to use specific 'major / minor' chords as in (roman number), The hirajoshi chord falls on the 'IV' position and the pentatonics fell on the 'II.' 'III.' and 'VI' positions, The remaining positions 'I.' 'V.' and 'VII.' are not ugly duckling chords...
I. C major 7th Add11 (we take that back)...
V. G major 7 Add 11 (This one's ugly too)...
VII. B diminished 7th Add11 (E B F A D E)...

Quite a pretty chord...
The 'diminished Add11' chord seems to be a cool chord so it's probably a cool scale as well, Normally you can find several positions of any chord so here are some other positions of the 'VII. Add11' chord...
VII. B dim. Add11 (A F B D E)....

VII. B dim. Add11 (E D F A B E)...

VII. B dim. Add11 (A B D F E)...

Whether or not these hold up better as chords than scales is just as unknown as their names, See our older 'extended 7ths' lesson as well as the 'pentatonic chords' lesson for a little more on this chord...
